This comforting and healthy vegetarian meal is so easy and perfect for brunch, lunch or dinner! Any vegetables will work well in this recipe.

  1. Step 1

    Over low heat, cook onions and baby spinach together. Set aside.

  2. Step 2

    Cook sliced pumpkin in microwave for 4 minutes until lightly cooked.

  3. Step 3

    Beat eggs with milk and combine with cottage cheese.

  4. Step 4

    In a pie dish, place pumpkin, capsicum, cooked spinach. Pour egg mix through.

  5. Step 5

    Bake at 180deg for 20-30minutes until firm. Serve with salad.
